The karela, or bitter melon, is a versatile vegetable that can be used in a variety of dishes, and when stuffed with flavorful fillings, it becomes a delicious and satisfying meal. In this recipe, we will show you how to prepare this mouthwatering dish step by step, so you can enjoy it in the comfort of your own home.

Ingredients:

– 4 karela (bitter melons)
– 1 cup besan (gram flour)
– 1/2 cup moong dal (split green gram)
– 1/2 cup rice
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– 1 teaspoon garam masala
– 1 teaspoon salt
– 2 tablespoons oil
– 1 onion, finely chopped
– 2 tomatoes, finely chopped
– 1 green chili, finely chopped
– Fresh coriander leaves, for garnishing

Instructions:

1. Begin by washing the karela and cutting off the ends. Make a vertical slit on each karela, but do not cut all the way through. This will help the filling to stay inside while cooking.
2. In a separate bowl, soak the moong dal and rice in water for about 30 minutes.
3. In a pan, heat the oil and add the chopped onions. Sauté until the onions turn golden brown.
4. Add the chopped tomatoes and green chili to the pan. Cook until the tomatoes are soft and the mixture is well combined.
5. Add the besan, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, and salt to the pan. Mix well and cook for a few minutes until the spices are fragrant.
6. Add the soaked moong dal and rice to the pan. Mix well and cook until the mixture is well combined.
7. Stuff the karela with the prepared filling, ensuring that the filling is evenly distributed.
8. In a pressure cooker, place a piece of cloth at the bottom. Place the stuffed karela on top of the cloth.
9. Add 1 cup of water to the pressure cooker and cook for about 10-12 minutes on high pressure.
10. Once the pressure is released, remove the karela from the cooker and transfer it to a serving plate.
11. Garnish with fresh coriander leaves and serve hot with rice or roti.

Enjoy your delicious stuffed karela! This dish is not only flavorful but also packed with nutrients, making it a perfect addition to your healthy eating plan. Whether you’re a seasoned cook or a beginner, this recipe is sure to impress your family and friends. Happy cooking!
