How to Make Fresh Bagels

Bagels are a beloved breakfast staple, known for their chewy texture and slightly sweet taste. Whether you’re a fan of traditional salted bagels or the variety of flavors available, making fresh bagels at home can be a rewarding experience. In this article, we’ll guide you through the process of how to make fresh bagels, from preparing the dough to boiling and baking them to perfection.

Ingredients

Before you start, gather the following ingredients:

– 2 cups (450g) all-purpose flour
– 1/4 cup (60g) warm water (not hot)
– 1 packet (7g) active dry yeast
– 1 tablespoon (15g) sugar
– 1 teaspoon (5g) salt
– 2 tablespoons (30g) unsalted butter, melted
– 1 tablespoon (15g) honey or molasses
– Vegetable oil, for greasing

Step 1: Prepare the Dough

1. In a small bowl, dissolve the sugar and yeast in the warm water. Let it sit for about 5-10 minutes, or until the mixture becomes frothy.
2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture, melted butter, and honey or molasses.
3. Stir the ingredients together until a dough begins to form. If the dough is too sticky, add a little more flour until it’s no longer sticky but still soft.
4. Turn the dough onto a floured surface and knead for about 5-7 minutes, or until it becomes smooth and elastic. If the dough is too dry, add a little water; if it’s too sticky, add a little more flour.

Step 2: Let the Dough Rise

1. Place the kneaded dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.
2. Once the dough has risen, punch it down to release the air and turn it out onto a floured surface.

Step 3: Shape the Bagels

1. Divide the dough into 8 equal pieces. Roll each piece into a 12-inch rope.
2. Shape each rope into a loop, then pinch the ends together to seal the loop. You can make a traditional bagel shape by pulling the ends apart slightly to create a hole in the center.
3. Repeat this process with all the dough pieces.

Step 4: Proof the Bagels

1. Place the shaped bagels on a greased baking sheet, cover them with a damp cloth or plastic wrap, and let them proof for about 30 minutes, or until they have doubled in size.
2. Preheat your oven to 425°F (220°C).

Step 5: Boil the Bagels

1. Bring a large pot of water to a rolling boil. While the water is heating, prepare a baking sheet lined with parchment paper or a silicone baking mat.
2. Once the water is boiling, gently lower the bagels into the water, one at a time, using a slotted spoon or tongs. Boil for about 1 minute on each side, or until they float to the surface.
3. Remove the bagels from the water and place them on the prepared baking sheet.

Step 6: Bake the Bagels

1. Bake the bagels in the preheated oven for about 15-20 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
2. Remove the bagels from the oven and let them cool on a wire rack.
